These are necessary nutrition, but these things are there in vegetable diet. Rice, starch; wheat, protein; dahl, protein; then vegetable, carbohydrate; and milk, fat.
Room Conversation with Bernard Manischewitz -- March 5, 1975, New York:

Bernard Manischewitz: I have some questions.

Prabhupāda: Yes.

Bernard Manischewitz: You know I'm in the food business, so my first question deals with my food business. I'm familiar with the Kṛṣṇa cookbook—I've read the recipes—but I do not see any suggested menus or nutritional information, and I'm wondering if there's any thought that's been worked on that. Is there any background of menus or nutritional information?

Prabhupāda: Yes. Nutritional information means that we require for balance food: starch, carbohydrate, protein, fat. What else? Starch, carbohydrate, protein, fat. These are necessary nutrition, but these things are there in vegetable diet. Rice, starch; wheat, protein; dahl, protein; then vegetable, carbohydrate; and milk, fat. So if we take food and test it within these four, five groups... Eat according to our conception, sattvikaḥ. Sattvikaḥ means foodstuff in goodness. There are three qualities in the material world—goodness, passion and ignorance. So they are described: these are goodness foods, these are passion, these are ignorance. So these items: rice, wheat, vegetables, dahl and milk is sufficient for nutrition. Above that, you take little fruit, it is very good. And in India this foodstuff is taken by the learned circle—brāhmaṇas, kṣatriyas—and they keep very good health, very good life.

Bernard Manischewitz: This is on experience, on the experience that they have.

Prabhupāda: Yes. This is experience. You will find many healthy persons in India subsisting only on these foodstuffs, and they have good brain also. India is still, I think, eighty percent people are strictly vegetarian. Not to speak of the higher class, but the lower class also. The higher class, brāhmaṇa, kṣatriya and vaiśya. Vaiśya is via media, between higher and lower. And the śūdras and less that the śūdras, caṇḍālas, they are lower class. So meat-eating is current among these lower class of men, śūdras and caṇḍālas. The caṇḍālas, they have no discrimination, they eat everything, and śūdras, they eat meat, but under restriction. Some of them do not; some of them do, but under restriction, and that is restricted with the goat animal. Less than the śūdras-caṇḍālas, pañcama, fifth grade—they eat everything. Especially they eat—because cow protection in India is very strict—so these caṇḍālas, fifth grade men, they eat generally pigs. Pigs they eat. Outside the village, they have their residential quarters, and they fry live pigs. And they make... Not daily; sometimes. But they eat pigs, and amongst them, there is a class—they are cobblers—they eat this cows' flesh when the animal is dead, not living and we'll kill.

The comparison is there in Hari-bhakti-vilāsa. Perhaps purposefully the recipe is not given so that you can take and misuse this. (laughter) And forget chanting.

Paramahaṁsa: Śrīla Prabhupāda, in what śāstra is that recipe given for gold?

Prabhupāda: In the Hari-bhakti-vilāsa. Not recipe. The comparison is there in Hari-bhakti-vilāsa. Perhaps purposefully the recipe is not given so that you can take and misuse this. (laughter) And forget chanting. Because as soon as you get gold, then you are no more interested in Kṛṣṇa consciousness. That is the infection of gold.

Paramahaṁsa: But I have gold.

Prabhupāda: No, you have gold. (laughs)

Tamāla Kṛṣṇa: Not great quantities.

Paramahaṁsa: Originally when I came to the movement I asked you this, remember? And you gave lectures on the subject, and I asked you about it. And you asked me for what purpose I wanted it.

Prabhupāda: No, no, I don't wonder you. But the gold has got such infection that if one... That is the whole world, that as soon as one has gold, he is no more interested with God. That is the infection. "Ah!" He will say, "This is meant for the poor class of men who has no gold. I have gold. I am God." You know that Kali-yuga. He was punished, that "You get out." Then he said that "Where shall I go? Everywhere is your kingdom." Then Parīkṣit Mahārāja said that "You go here, in the brothel, in the..., these four things." Striyaḥ śūna-pānā dyutāḥ yatra pāpāś catur-vidhāḥ: "Illicit sex, and slaughterhouse, and liquor shop, and gambling." Then he requested that "Instead of going so many places, you give me some place where one place will be sufficient." Then he said, "You go where there is gold. Then you get everything." Striyaḥ śūna-pānā dyutāḥ yatra pāpāś catur-vidhāḥ. Formerly, especially in Bengal, the gold merchants are taken as—that is artificial, of course—the low class because they are rich, and they indulge in these four kinds of prohibition. Hare Kṛṣṇa.

Rāmeśvara: ...about chanting.

Prabhupāda: Yes. "Why it is happening? Why we have given everything. Our father, mother, our home, our comforts, our ideas, stereotyped, our religion, culture—everything we have given up. So don't you see the power of chanting? You may think it is bad, but see the power. Similarly, these diseased person, if they chant, it has got power to bring him in the normal condition. The power is there. It is already proved. You say it is brainwash, but the power is there. Reaction is there. That's a fact. You are admitting. So now, whether this reaction is good or bad, that you cannot judge because you are bad. But impersonally, if you judge, you see how the power is, that we were drunkards, we were woman-hunter, we were meat-eaters—we have given up. You cannot give up even smoking cigarette. So just this is the power. Ceto-darpaṇa-mārjanam (CC Antya 20.12)." Why don't you take this side? The power is there. The electric power is there, either you use it for heater or for cooler. That is your na... But the power is there. Without this power, it cannot run on, either heater or cooler. Give them this recipe(?). "You have to admit. You are admitting that 'Your Hare Kṛṣṇa mantra working on the brain.' So the power is there. You have admitted."

This should be properly done immediately.

Brahmānanda: Instead of quoting from some śāstra, they quote from a mundane book.

Tamāla Kṛṣṇa: All the books. There's no more Sanskrit used.

Prabhupāda: So who has done this? You are asking me?

Brahmānanda: Rāmeśvara Swami's in charge.

Hari-śauri: Another example's like that they put a recipe for halavā in the magazine, two-page spread in color.

Prabhupāda: So the Rāmeśvara should not be in charge. The Satsvarūpa should be in charge.

Satsvarūpa: I'm very eager to take it over again.

Prabhupāda: Immediately do.

Tamāla Kṛṣṇa: That was going to be our proposal. We went through the magazine, Satsvarūpa Mahārāja, Brahmānanda Mahārāja and myself, on the underlying points, and as Hari-śauri was pointing out, just like in the old days sometimes they would give a recipe and it would end with the showing of how to offer obeisances for offering the prasāda. But here that is completely neglected, that part. It simply says, "At the end of cooking, chant Hare Kṛṣṇa and it will make the food taste better." There's no understanding that the food is then supposed to be offered to Kṛṣṇa for Kṛṣṇa's pleasure. That whole idea is deleted. Everything is very much simplified with the idea of making it sell more.

Prabhupāda: No, this should be properly done immediately. Who is the editor?

Regarding your question about the Prasadam recipes; Krishna is offered foodstuff in goodness. The foodstuffs in the modes of goodness are wheat, rice, pulse (beans, peas), sugar, honey, butter and all milk preparations, vegetables, flowers, fruits, grains.
Letter to Kris -- Los Angeles 13 November, 1968:

I have noted your questions carefully, and regarding your question about the Prasadam recipes; Krishna is offered foodstuff in goodness. The foodstuffs in the modes of goodness are wheat, rice, pulse (beans, peas), sugar, honey, butter and all milk preparations, vegetables, flowers, fruits, grains. So these foods can be offered in any shape, but prepared in various ways by the intelligence of the devotees. The ingredients are always the same as above, whether you fry them, boil them, bake them, powder them, or whatever way they are combined or cooked, the idea is that they must come from this group of foodstuffs. So you can make your own recipe if you like, so long as the ingredients are within this group. This foods group is stated by Krishna in the Bhagavad-gita, and we follow accordingly. Now the thing is that you must consider by whom you are being taught what is healthy and what is not healthy. What is their authority? Actually, this healthy and non-healthy is a material consideration, and we are simply interested in what Krishna wants, so we offer to Him to eat whatever He wants. And He asks for food preparations from within this group. I hope this will clarify the questions about Prasadam preparations for you to understand.

These various varieties of foodstuffs may be prepared either in the given recipes or if you like you may invent nice new formulas for offering. The important thing is that your preparations be palatable for Lord Krishna and that the ingredients be within the groups of ingredients already listed.

So far as explaining my letter to Kris, I have listed the ingredients which may use for preparing prasadam but these various varieties of foodstuffs may be prepared either in the given recipes or if you like you may invent nice new formulas for offering. The important thing is that your preparations be palatable for Lord Krishna and that the ingredients be within the groups of ingredients already listed. You have asked me about sassafras and yes, it may be offered. Mushrooms are generally not offered, but there is no prohibition, there is no harm in them.

Purchase pearl barley from the market, and the recipe is 1 cup of barley and four cups of water to be boiled for at least 1/2 hour. That liquid preparation may be mixed with milk and sugar, and she may take.

I have received your letter dated January 28, 1969 regarding Jadurani's sick health. She requires complete rest. All of her work should be suspended, and she should be given liquid foods, just like barley water mixed with milk. That liquid preparation may be mixed with milk and sugar, and she may take. Jadurani must not exert herself in any way. She should take complete rest and chant Hare Krishna. I am pleased to learn that you are thinking of putting together a cookbook of our Krishna prasadam recipes. I understand that in London, Yamuna Dasi has already done some work on this same project, so you may correspond with her in this connection.

I am pleased to learn that you are thinking of putting together a cookbook of our Krishna prasadam recipes. I understand that in London, Yamuna Dasi has already done some work on this same project, so you may correspond with her in this connection. I know that at our feasts especially many persons become interested in preparing foodstuffs in this way, so this cookbook is a nice thing to instruct such persons in preparing and offering nice prasadam for the Lord. So when there is some tangible book ready for publication, please inform me, and we shall try to arrange for its publication. I am pleased to note your description of the increasing interest in vegetarian diet in this country. Actually, the practice of meat-eating is very detrimental to spiritual life, because in spiritual life the goal is to become free from all sinful reactions, and meat-eating means simply to force oneself to suffer the sinful reactions of killing our fellow living entities. So as many people will be taking to practicing spiritual life through the influence of our Sankirtana Movement, such cookbook will be very important, and you should work for this as you are able.

Regarding your recipe for pickling foodstuffs, it is all right, but it will be nicer still if you follow the following procedure.

Regarding your recipe for pickling foodstuffs, it is all right, but it will be nicer still if you follow the following procedure: Cut berries, green apples or green tomatoes into pieces. Without adding water, add a mixture of equal quantities of salt, turmeric and red peppers. Then let it be dried in the sunlight as far as possible. When this is done, put it either in mustard oil or in olive oil, and it will then keep for years.

Regarding mango recipe directions, it may be done as follows: first of all collect the juice, then boil it on fire until it is a thick pulp. And while boiling, add a little salt also. That will act as a preservative; but don't make it salty. Then spread the boiled pulp in thin layers on dishes or suitable pots and dry it in the sunshine. I think it will come out successful.
