Soul means the living force which is moving the body. That is soul. How you can say the animal has no soul?
Sunday Feast Lecture -- Atlanta, March 2, 1975:

Now, apart from Bible or any scripture, how do you find that the animal has no soul? How do you consider it? What is the symptom of having soul? That is very easy, but you do not know. When the soul is gone from the body, it does not move. And when the soul is there, it moves. This is the understanding of soul. So do you think the animal does not move? The animal has no blood? The animal has no bone? How do you say that animal has no soul? This is foolishness. The soul is there. Even one small ant, there is soul. Otherwise how it is moving? So long the soul is there, the dull material body is moving. And as soon as the soul is gone, you will cry, "My father has gone away." Why your father gone? It is lying there. Why do you say, "My father has gone away"? This is ignorance. We do not know what is soul. We see the body. So long I have seen the body of my father. Now the soul has gone. I am crying, "My father has gone away." But did you see your father? "Yes, that body." The body is there. Why you are crying? So it is very common sense affair to understand where there is soul. A big stone, a big mountain, it cannot move although it is so big. And a small ant is moving. Why? There is soul. So how can you say the animals have no soul? This is ignorance. Tathā dehāntara-prāptiḥ (BG 2.13). The soul being within the body means it is changing the body from babyhood to childhood, childhood to boyhood, boyhood to youthhood, like that. And if the child is born dead—no more change of body. That is the proof that there is soul. Soul means the living force which is moving the body. That is soul. How you can say the animal has no soul? Everyone has soul. Even the grass has soul, because it is growing, changing body. (break) ...simple thing. Ceto-darpaṇa-mārjanam (CC Antya 20.12). Because all dirty things are within our heart. On account of dirty things we are thinking that "I have got soul, and the animal has no soul." This is due to dirtiness of the heart. So if you chant Hare Kṛṣṇa, the heart will be cleansed. Just like a mirror with a dust, you cannot see, but if this dust is cleansed, then you can see your face very nicely. Similarly, because on account of material contamination our heart is unclean, we cannot see things as they are, but the chanting process will cleanse your heart, and then you will see everything in order. Then you will not say the animal has no soul.

Similarly, the soul means consciousness. It is just like sunshine. The soul is very small particle, but it is shining as consciousness.
Interview with Newsday Newspaper -- July 14, 1976, New York:

Interviewer: I'm trying to find out whether the consciousness lies within us, brought out...

Prabhupāda: Yes, consciousness... Consciousness will be... Because... Just like sunshine and the sun. Similarly, the soul means consciousness. It is just like sunshine. The soul is very small particle, but it is shining as consciousness.

Interviewer: So we can allow it to fulfill itself or not.

Bali-mardana: He wants to know, is this consciousness within us.

Prabhupāda: Yes. So long the soul is there, the consciousness is there.

Bali-mardana: Kṛṣṇa consciousness.

Prabhupāda: Not Kṛṣṇa cons..., immediately Kṛṣṇa conscious. Consciousness is there. Just like so long the soul is there, you pinch any part of your body—you'll feel pain. That is consciousness. And when the soul is gone out of the body, If you cut the hand, there will be no consciousness.

The soul means intelligence, they say. Otherwise how do they say the animal has no soul?
Room Conversation -- November 3, 1976, Vrndavana:

Hari-śauri: The thing is that they don't claim that they are brainwashed. So we're a society where we're doing all these things, combinedly.

Prabhupāda: "It is folly to be wise where ignorance is bliss." If the majority are fools and rascal, if you say something sane, then they'll ask... The man, the sane man, he is insane. He's crazy.

Hari-śauri: Then how to fight them?

Prabhupāda: That is the position. The only means is that in spite of all opposition we have to chant Hare Kṛṣṇa. That will cleanse. Otherwise there is no other way. Argument and logic, they have no brain to understand. It requires this transcendental method, ceto-darpaṇa-mārjanam (CC Antya 20.12), by chanting Hare Kṛṣṇa. That is wanted. You have to chant Hare Kṛṣṇa and let them give the chance to hear. Then they will be able to catch it, what we are saying, not directly. It is not possible.

Hari-śauri: Then how are we going to fare in this court case? 'Cause in these court cases it's a question of presenting one side against the...

Prabhupāda: No, philosophy is there. Court case means there is philosophy, there is logic. So for that we have got so many books. We can... But general mass of people, chanting. When there is court case we are prepared to defend. We have got... We are not fools. We can talk that what is the aim of life. They cannot say anything. The transmigration of the soul, the aim of life which we are discussing in our book, that's fact. How he can deny the transmigration of the soul from one body to another? And if that is accepted, the whole problem is solved. He does not know what kind of life he is going to get. Therefore they do not accept this philosophy. If once accepted, then next question—"What kind of life we are going to get, either to become a tree or a dog or human being?" What arrangement you have done that you will get next life human being? Then the pious and impious activities comes one after another. The basic principle they are denying. "After this body is finished, everything is finished." Bhāsmi bhūtasya dehasya punar agama...(?) "The body will be burned into ashes, and where is life? Who is coming? Who is going? That's all." They do not see the soul. Their medical science cannot find out where is soul. How do they say the... The soul means intelligence, they say. Otherwise how do they say the animal has no soul? Why do they say? What is the... "Man has soul," they say. "The animal has no soul."

Jagadīśa: That's what the Christians say. The Christians say.

Prabhupāda: So what is the symptom?

Hari-śauri: Well, they... 'Cause he, man, has reason and logic.

Prabhupāda: That means reason and logic is soul. That is their idea. That is not soul. Intelligence, when I say, "You have got intelligence," it does not mean you are intelligence. "You have got intelligence," we say like that. We never say, "You are intelligence." So intelligence is not soul. The rascals, they do not know. Mistake. Nobody says, "You are intelligence." They say, "You are intelligent."

Hari-śauri: Intelligence is something you possess.

Prabhupāda: Yes. Hare Kṛṣṇa. So? (break)
